Pigs in the Blanket Beef and Bacon
Little sausages wrapped in bacon, with the addition of a little drizzle of honey to make them sticky and even more delicious!
Pigs in a blanket make the best accompaniment to that Christmas turkey - we all fight over these tasty little sausages!
Be sure to make plenty. If you think 4 each is enough then double it. Even if there are a few left (unlikely) they make great leftovers to nibble on later.

If I didn't make at least 8 of these little bacon-wrapped sausages PER PERSON on Christmas day, I'm pretty sure there'd be a riot in the Kitchen Sanctuary household.
I usually arrange a few around the turkey - which are gone in 10 seconds.
The person who finds a stray one hiding underneath the turkey has to fight off everyone else for it.
Then halfway through dinner (when the sprouts and other veggies are finally being consumed) I quietly ask if 'anyone wants any more pigs-in-blankets?', as I have a few spare left in the oven. Then there's the quick stampede to the kitchen to get them, before we can peacefully resume dinner.
I could serve them all up at once, but where would be the fun in that 😁
📋 What do we need?
Only 3 ingredients are needed:
- Bacon - I use strips of smoked streaky bacon for the most flavour
- Sausages - I go with good quality little cocktail sausages - because serving up 30 regular-sized sausages along with all of the other Christmas dinner dishes would be ridiculous (wouldn't it?...)
- Honey - totally optional, but this gives them a lovely touch of stickiness
🔪 How to make Pigs in a Blanket

- Stretch out a piece of bacon and slice in half, widthways.
- Roll up the sausage in the half-piece of bacon and place on a baking tray, seam-side-down.
- Repeat until all of the sausages and bacon are used up, then bake in a hot oven until cooked.
- Drizzle on a little honey, place back in the oven for 5 minutes, then serve.
👩🍳 PRO TIP If you want to save on a bit of back-breaking scrubbing, line your baking tray with non-stick foil (I wish I'd remembered to do that for the video!)
Serve them up with your Turkey dinner, or serve them as party food - just stick a cocktail stick in each.
They taste great warm or cold.

Pigs in a Blanket Recipe
Little sausages wrapped in bacon, with a little twist to make them sticky and even more delicious! Perfect with that Christmas turkey!

- 15 rashers/strips of smoked streaky bacon
- 30 cocktail sausages
- 2 tbsp honey

Preheat the oven to 200C/400F.

Take a rasher of bacon and stretch it out a little, then slice it in half widthways.

Take a cocktail sausage and wrap one of the pieces of bacon you've just sliced in half around it.

Place the wrapped sausage on a baking tray, seam-side down.

Repeat with the remaining sausages and bacon.

Place in the oven for 25 minutes, until the sausage is cooked and the bacon is crisp.

Drizzle over the honey and place back in the oven for a further 5 minutes.

Remove from the oven, leave to cool for a minute (the honey will be very hot), then carefully transfer to a serving plate and serve.
Can I make it ahead?
You can prep them ahead by wrapping the sausages in the bacon and placing on a baking tray, then covering and refrigerating for up a day. Then cook as per the recipe (uncovered), straight from the fridge.
If you want to cook them ahead, then cook, cool, cover and refrigerate the sausages.
Reheat in the oven (uncovered) at 190C/375F on a tray in a single layer for 10 minutes.
Can I freeze it?
Yes, you can prep them ahead by wrapping the sausages and placing on a baking tray, then cover and freeze. Defrost overnight in the refrigerator, then remove the cover and cook as per the recipe, straight from the fridge.
If you want to cook them ahead, then cook, cool, cover and freeze the bacon-wrapped-sausages.
Defrost overnight in the refrigerator, then reheat in the oven (uncovered) at 190C/375F on a tray in a single layer for 10 minutes.
